5 day countdown....

Teddy comes home in 5 days!! Woohoo! It will have been about 75 days he was deployed this time, craziness!! He's been working-out hardcore while he's been gone so it's only logical that this is pretty much what he looks like now..;p i know...ur jealous..but seriously the babies and I are so stoked, so is he! He is so ready to be home. Thank you iChat for keeping us connected while he's been gone, but it will be great to have him home for a few months until the next round. stole it...

Okay, so I totally stole this idea from a family and a blog that I LOVE..check it here...
I had to get eggs for Piper's preschool today and so I decided to duplicate what I remembered from the blog post while I was out and about. For some reason I couldn't find the same blossoms at Micheals and found no glitter eggs at Target, but I made do with what I could find and just quickly decorated the plastic eggs leftover from Piper's eggs for her class..and we have a new Easter decoration! The girls loved it and I have to say it brings the festive vibe quite nicely to the house! Thanks for the idea Ashleigh, and try not to laugh too hard at my sparce replica..let's just say mine is more.."oriental"..lol! Hoppy Easter!

Chocolate Chip Cookie Dough Truffles..

need i say more?....these have NO egg, so these are great for whatever eating lifestyle you go by, even Vegan!!...

Recipe:
-1 C butter, room temp
-3/4 C granulated sugar
-3/4 C packed brown sugar
-1/3 C milk
-1 tsp vanilla
-2`1/2 C flour
-1/4 tsp baking soda
-1 tsp salt
-1 C Mini semi-sweet choc chips
-1 pkg Baking Chocolate (usually a box of bakers choc is 8 oz, i ended up using 2 boxes)

Beat butter and sugars in large bowl on medium speed until light and fluffy. Add milk and vanilla. Stir in flour, baking soda and salt and mix on low speed until incorporated. Stir in chocolate chips.

Cover and chill for about 30 min.

When dough is firm enough to handle, form dough into 1 in balls and arrange on a baking sheet lined with wax paper. Place sheet/sheets in freezer & let chill for 30 min. Melt baking chocolate in a double broiler or microwave according to pkg directions. (You can also use a glass bowl that fits over one of your pots and boil water in the pot below with the bowl on top to melt the chocolate..cheap double broiler version)

Using a fork (or I use a toothpick as well), dip the cookie balls into the melted chocolate, covering completely with the chocolate. Tap fork or toothpick on side of bowl to remove excess, and return ball to waxed paper. (u can use another toothpick to help slide ball off). Let the cookie balls harden at room temp or in the fridge.

Decorate with colored chocolate by putting other types of melted chocolate in a ziploc bag & cutting corner to the size of "drizzle" you'd like. Have fun!

what to do...

Yikes, I'm saying it outloud..i'm putting it out there..I'm going to start a new life..yep..I am, a running life..a "run races for good causes" life. I've never been much of a runner, I always get discouraged because I can't run without stopping to walk, BUT my mantra this year is "NO EXCUSES"..sorry I just yelled..

So I've actually been pretty consistent in my exercise, I walk, I run, I dance and I can feel my legs getting a bit stronger..my tummy is another issue all together, but I did Just have a baby 3 months ago so that will take longer..

So, instead of just saying "I want to lose weight" I'm setting up goals for myself to RACE! Yes I may be the last one across the line, yes I may have to stop and walk, ( and throw up..)but I'm hoping I only get stronger and greater at running with each new race. I have to say partly my inspiration has been my husband who has started running this summer and just steadily, consistently does his running almost everyday and now runs 20-30 min without batting an eyelash.

So..also I want to get outside myself, be of service more and since my life is pretty hectic with my own family I decided a great way to be of service is to run for causes/charities that can benefit people and that are close to my heart, I can make a difference AND tone my thighs at the same time, what's not to love?

So here it is..I'm going to do this one, this one, this one (which some of you know is extra close to my heart), and this one. And I'll continue to look for more throughout the summer...

As you may notice none of them are a full or even a half marathon, most are 5k's but that's good for me, not sure I'd ever want to do more than that, but this is a start and great motivator and great way to be of service and feel fulfilled and purposeful outside of my wonderful role as Mommy.

Help keep me accountable! I can do this, and I'm excited for accomplishing something I never have before. I just know it will feel awesome to cross that finish line each time! I'll hopefully get a smokin' hot body in the process and Teddy will start saying, " I hate to see her go, but I love to watch her leave.."..it's totally bound to happen..booyah!
